Cinnamon (Cinnamomum zeylanicum)Cinnamon is the inner bark of a tropical evergreen tree. Israeli scientists found that cinnamon extract is useful in inhibiting the bacteria, H. pylori, which causes many ulcers. Cinnamon even contains an antioxidant, glutathione. Although our bodies also produce this antioxidant, cinnamon can enhance those levels, helping to counter lipid (fat) oxidation. Curry leaves (Murraya/Chalcas koenigii)Most people in the world today know what a curry is - or at least think they do. In Britain the term ‘curry’ has come to mean almost any Indian dish, whilst most people from the sub-continent would say it is not a word they use, but if they did it would mean a meat, vegetable or fish dish with spicy sauce and rice or bread. The one thing all the experts seem to agree on is that the word originates from India and was adapted and adopted by the British Raj. Researchers say curry's powerful antioxidant and anti-inflammatory properties make it a very attractive possibility for treating diseases such as Alzheimer's, cancer, and heart disease. Curry powder is a British invention to imitate the flavour of Indian cooking with minimal effort. Some curry powders, or so the books tell, indeed contain curry leaves, but probably only for historic or linguistic reasons, since dried curry leaves lose their fragrance within days. A typical curry powder should derive its taste mainly from roasted cumin, roasted coriander, black pepper, chiles and roasted fenugreek. Organic Fenugreek, Ground 4 oz.
Fenugreek (Trigonella foenum-graecum L)If the name is unfamiliar, you may assume you have never eaten fenugreek. Most likely you have; it is a common ingredient in curry powders. An extract of the seeds is also used commercially in artificial flavorings such as vanilla, caramel, butterscotch and especially maple. The taste of the spice is somewhat like burnt maple, sweet yet bitter with a hint of celery. In addition to curries, fenugreek will enhance meats, poultry and vegetables. Too much of it will cause foods to become bitter, however, so use with caution until you become familiar with it. Fenugreek, whole or ground, is common to Middle Eastern and African cooking. Approximately twenty of the flat light-brown seeds grow in pods that should be dried before using as they are not tasty in the raw state. Fenugreek is often marketed already ground. Look for it as a specialty spice from most purveyors. Few recipes call for fenugreek but you might find it interesting to experiment with the next time you make a pot of beef stew or grill some vegetables. Below is a recipe to get you started.

Chipotle Seasoning Blend
The word chipotle, which was also sometimes spelled chilpoctle and chilpotle, comes to English originally from the Nahuatl word chilpoctli by way of Mexican Spanish. The Nahuatl word chilpoctli means smoked chile, formed from chil (=chile pepper) + poctli (=smoke). The original Nahuatl word was spelled pochilli and has apparently become reversed. Today it is commonly misspelled and mispronounced as chipolte, an error of metathesis. Other early spellings from Mexico are tzilpoctil, tzonchilli and texochilli. The most common pronunciation is chee-POHT-lay, although some of those who are aware of this word's Nahuatl roots prefer the more historical pronunciation chee-POHT-l. Organic Allspice, Ground
Allspice, also called Jamaica pepper, Myrtle pepper, pimento, or newspice, is a spice which is the dried unripe fruit of the Pimenta dioica plant. The name allspice was coined by the English, who thought it combined the flavour of several spices, such as cloves, pepper, and even cinnamon and nutmeg. Uses: Allspice is used in a variety of foods, mainly as a background flavor in combination with other sweet spices, e.g. in bakery items such as spice cakes and cookies. It is also used extensively in the processed meats industry, primarily in two forms: the essential oils (pimento leaf and pimento berry) and the oleoresin, to some extent, in products like bologna and wieners. It is used whole in pickling spices for corned beef, sauerbraten and fish. Allspice is a major flavor contributor to Caribbean and Jamaican foods and spice blends. The German, Italian and Scandinavian people use more allspice per capita than do other nationalities. Cultivation: Allspice is a small shrubby tree, quite similar to the bay laurel in size and form. It can be grown outdoors in the tropics and subtropics with normal garden soil and watering. Smaller plants can be killed by frost, although larger plants are more tolerant. It adapts well to container culture and can be kept as a houseplant or in a greenhouse. The plant has separate sexes, hence male and female plants must be kept in proximity in order to allow fruits to develop.

Organic Ginger Root
Organic Ginger Root / Zingiber officinale Ginger root is used extensively as a spice in many if not all cuisines of the world. Though called a root, it is actually the rhizome of the monocotyledonous perennial plant Zingiber officinale. Culinary uses Young ginger roots are juicy and fleshy with a very mild taste. They are often pickled in vinegar or sherry as a snack or just cooked as an ingredient in many dishes. They can also be stewed in boiling water to make ginger tea, to which honey is often added as a sweetener. Mature ginger roots are fibrous and nearly dry. The juice from old ginger roots is extremely potent and is often used as a spice in Chinese cuisine to flavor dishs such as in seafood and mutton . Ginger is also candied, is used as a flavoring for candy, cookies, crackers and cake, and is the main flavor in ginger ale, a sweet, carbonated, non-alcoholic beverage, as well as the similar, but somewhat spicier beverage ginger beer. A ginger-flavored liqueur called Canton is produced in the Guangdong province of China; it is advertised to be based on a recipe created for the rulers of the Qing Dynasty and made from six different varieties of ginger. Green ginger wine is a ginger flavoured wine produced in the United Kingdom by Crabbie's and Stone's and traditionally sold in a green glass bottle. Ginger is also used as a spice added to hot coffee and tea. In Japan, ginger is pickled to make beni shoga and gari or grated and used raw on tofu or noodles. In Western cuisine, ginger is traditionally restricted to sweet foods, such as ginger ale, gingerbread, ginger snaps (a type of cookie), ginger cake and ginger biscuits. Powdered dry ginger (ground ginger) is typically used to add spiciness to gingerbread and other recipes. Ground and fresh ginger taste quite different and ground ginger is a particularly poor substitute for fresh ginger. Fresh ginger can be successfully substituted for ground ginger and should be done at a ratio of 6 parts fresh for 1 part ground. Sesame Seeds
Toasted Sesame Seeds Sesame (Sesamum indicum) is a flowering plant in the genus Sesamum. Cultivation and uses Sesame is grown primarily for its oil-rich seeds, which come in a variety of colors. The small, cream-white sesame seed is used whole in cooking for its rich nutty flavour (although such heating damages their health-giving poly-unsaturated fats), and also yields a cooking oil. Sesame seeds are sometimes added to breads, including bagels and the top of hamburger buns. Sesame seeds are baked into crackers, often in the form of sticks. Japanese cuisine uses sesame seeds in many ways. One is to make goma-dofu, which is made from sesame paste and starch. Whole seeds are found in many salads and baked snacks as well. Chefs in tempura restaurants blend sesame and cottonseed oil for deep-frying. Tan and black sesame seed varieties are roasted and used for making the flavoring called gomashio. The seeds are rich in manganese, copper, and calcium (90 mg per tablespoon for unhulled seeds, only 10 mg for hulled seeds), and contain Vitamin B1 (thiamine) and Vitamin E (tocopherol). They contain powerful antioxidants called lignans, which are also anti-carcinogenic. They also contain phytosterols, which block cholesterol production. It has tended to be forgotten that some salt intake is absolutely necessary; that people need salt, sodium chloride, to survive: The chemical requirements of the human body demand that the salt concentration in the blood be kept constant. If the body does not get enough salt, a hormonal mechanism compensates by reducing the excretion of salt in the urine and sweat. But it cannot reduce this output to zero. On a completely salt-free diet the body steadily loses small amounts of salt via the kidneys and sweat glands. It then attempts to adjust this by accelerating its secretion of water, so that the blood’s salt concentration can be maintained at the vital level. An eight-year study of a New York City hypertensive population stratified for sodium intake levels found those on low-salt diets had more than four times as many heart attacks as those on normal-sodium diets – the exact opposite of what the “salt hypothesis” would have predicted. (1995). Dr. Jeffrey R. Cutler documented no health outcomes benefits of lower-sodium diets. Salt and Good Health: Salt is essential not only to life, but to good health. The National Academy of Sciences recommends that Americans consume a minimum of 500 mg/day of sodium to maintain good health. Individual needs, however, vary enormously based on their genetic make-up and the way they live their lives. Salt and Cardiovascular Health: For 4,000 years, we have known that salt intakes can affect blood pressure through signals to the muscles of blood vessels trying to maintain blood pressure within a proper range.
